African sheep (Ovis aries) offers a great economical and social potential in Colombia. In the septentrional zone of Tolima more than 90% of them are kept in free ground under free browse and shepherd, in this way obtaining their natural feeding, because of that and due to the quality of the materials is basic in the animal production. the main objective of the study was to stablish the nutritional characteristics of the feeding analyzing some non leguminous alimentary resources like: guacimo (Guazuma uimifolia), mosquero (Croton leptostachus), veranera (Bouganvillea, gravata), pajarito (Pithirusa pyrifolia). pringamosa. (Clrtica baccifera), grama horqueta (Eleusime indica), totumo (cresentia cujete). The Chemical and nutritional caracterization included: dry matter, total protein, ashs, organic matter, cellular wall and its fractions. Additionally the presence of antinutritional factors in the plants were analized. The nutrients present in the materials showed significant statistics differences (P>0.05) in their levels of dry matter (21.2% in Pringamosa vs 75.6% in grama horqueta). Total protein that rated about 7.8% for grama horqueta and 23.4% for pringamosa and cellular wall showed values between 34.3% for Pajarito vs 66.1% for grama horqueta; equally the degradability of the dry matter showed levels between 48.4% for the guacimo vs 87.1% for veranera. In general, the concentrations of secundary metabolites (tamines, saponines, oxalates, steroids) in the different materials, were found decreased. The conclusion wasthat the veranera and pringamosa because of their nutritive characteristics must be considered in the zone as materials the provide proper nutrients that are efficiently used by the sheep. In contrast grama horqueta showed decreased nutrients and low degradability.

Background: Flavor is defined as being the result of stimulating two senses simultaneously: odour and taste and this usually consists of human evaluation. This sensory parameter is affected by different animal conditions including animal breeds, animal production and in some cases the slaughter process. Objective: The aim of this work was to evaluate the effect of feeding system and ageing times on odour sensory response. Materials: Fiftyfour 10-week-old Dorper X Colombian lambs were used in 2 feeding systems: grazing and semi-feedlot (n=27). Samples were analyzed in 3 ageing conditions (0, 7 and 15 days). Meat samples were cooked in a preheated oven at 170°C until reaching an internal 72°C temperature. These were then cut into 2cm square cubes and evaluated by trained sensory panel. Results Obtained results shown that booth feeding systems do not affect the odour response, but in taste analysis is important to take in account that sensory response shown worst acceptation in semi-feedlot system in special at 15 ageing days. Conclusions: The grazing or semi-feedlot systems did not affect the sensory panel response in odour evaluation, which implies that this parameter does not generate influence in sensory responses, contrary to taste in which case semi-feedlot could influence costumer’s acceptance.

Background: The shortening produced during rigor-mortis is an important meat problem due to variation in ageing conditions as a consequence of isometric tension induced by storage conditions which could be improved by processing conditions. Texture is a variety of sensations given by hardness and softness related to mastication, cut and penetration which are related to water holding capacity, pH, connective tissue and muscle fibers state. Objective: The aim of this work was to evaluate the effect of feeding system, fasting period and ageing times on instrumental texture behavior. Methods: Fiftyfour 10-week-old Dorper X Colombian lambs were used in 2 feeding systems: grazing and semi-feedlot (n=27). Samples were analyzed in 3 ageing conditions (0, 7 and 15 days). Each feeding group was divided into 3 fasting groups (6, 12 and 18 hours) prior to slaughter. Meat samples were cooked in a preheated oven at 170°C until reaching an internal 72°C temperature. Samples were subjected to Warner Bratzler shear force and texture profile analysis (TPA). Results: Warner Bratzler results shown that the feeding system and time of ageing were the factors that presented statistical differences. Similar results were obtained from TPA analysis describing that both feeding system and ageing time played a significant role on almost every TPA parameters. Conclusion: Grazing and semi feedlot feeding systems have an important influence in lamb meat texture behavior parameters being grazing system which offer a best instrumental texture meat quality, if this quality means softer meat.

Antecedentes: el color de la carne puede modificarse por factores fisiológicos o de proceso, como especies, género, cantidad de fibras musculares, características genéticas y edad, produciendo diferencias que el consumidor puede observar. Objetivo: Este trabajo tuvo como objetivo evaluar el efecto de un sistema de alimentación en el análisis sensorial de color para corderos de ovejas de pelo cruzados con razas colombianas en respuesta al análisis sensorial Métodos: Se utilizaron 54 corderos colombianos Dorper X de 10 semanas de edad en 2 sistemas de alimentación. : pastoreo y semi-feedlot (n = 27). Las muestras se analizaron en 3 condiciones de envejecimiento (0, 7 y 15 días). El panel de análisis sensorial evaluó el atributo de color de las muestras de carne cruda en comparación con una escala de Pantone normalizada como su tabla de colores guía. Resultados: Los resultados mostraron que la respuesta de tri-estímulo dada por los miembros del panel usando la escala Pantone puede ser comparable con los valores obtenidos instrumentalmente que también estaban relacionados con la interpretación del valor ΔE con respecto al grado de ser "notable" o "ligero". Conclusiones: La respuesta de tri-estímulo dada por los miembros del panel usando la escala de Pantone puede tener una tendencia comparable a los valores obtenidos instrumentalmente y relacionados con la interpretación del valor de Delta E con respecto al grado de ser "notable" o "ligero", lo que implica que el tiempo de envejecimiento y la alimentación El sistema puede afectar la respuesta sensorial del color. © 2016, Universidad de Antioquia. Background: The electronic nose is a system of sensors which is far from a real nose’s sensitivity, it is a device based on chemical, biological and electro chemical responses from the compounds present in food products known as the aromatic footprint which might discriminate different food states. Objective: The aim of this work was to evaluate the effect of feeding system and ageing times in meat samples taken from Doper X Colombian lambs by electronic nose analysis Methods: Fiftyfour 10-week-old Dorper X Colombian lambs were used in 2 feeding systems: grazing and semifeedlot (n=27). Samples were analyzed in 3 ageing conditions (0, 7 and 15 days). 10 g of sample was weighed, vacuum-packed and cooked until reaching 72°C internal temperature and stored at 4°C. The samples were placed in 40 mL vials closed with 22 mm PTFE-silicone septa to start the analysis and then placed at 16°C for 10 minutes. Afterwards, they were incubated at 35.5°C for 20 minutes, a 100 mL/min flow was selected to avoid presenting low responses in the sensors. 40°C was established to prevent water condensate formation that could have interfered in the sensors’ response. Results: The obtained results showed that discrimination was possible between PC1 with 90.6% and PC2 with 72.6% (data variability) in feeding systems with 88.89% (correct discriminating function) due to the volatile compounds forming the aromatic profile of cooked lamb meat, especially sulphur aromatic ones. Conclusions: A greater number of sensors were necessary for discriminating between different ageing times on account of the multiple aroma-producing reactions.

African or Pelibuey sheep from Santander and Costa Atlántica (Colombia) were studied to evaluate carcass yield, Wholesale cuts and total lean meat (less than 10% of fa t). Uve weight, age, sex, perimeter of leg, size and weight of hot carcass, red and white visceras weight and skin weight were sistematically recordered from 358 pelibuey sheep. The information was distributed into several groups by range of age, live weight and sex. Processing of data was performed using variance analysis, Scheffe múltiple comparations test and linear correlation analysis. The sheep studied were 207 females; 15%werepregnant and 151 uncastrated males. The highest percentage of sheep was less than 1.5 years old (53.35%). According to age and sex the best carcass yield were sheep with less than 1.5 years old and uncastrated males (p<0.05). For females the prediction equation was: PECANAL= 0.36 + 0.299 PESO PIE + 0.218 PERPIE and the r2 value for the regression was 0.53, were PECANAL: Estimated carcass weight, kg, PESO PIE= Uve weight, kg and PERPIER = Perimeter of leg (cm). Aditionally 20 of this carcass were refrigerated during 24 hours and registred their Wholesale cuts, total lean meet, separable fat and bone yield. In this case uncastrated males show more lean carcasses and more total lean meat yield than females (p<0.05). Females reported higher proportions of leg and ribs and males higher percent of lion and neck (p<0.05).

Sheep and goats are susceptible to infections with Toxoplasma gondii and could play an important role in the transmission of the zoonotic parasite to human. We conducted a cross sectional study to estimate the seroprevalence and to assess the risk factors for T. gondii seropositivity in small ruminants under traditional husbandry systems. This study was carried out from November 2015 to April 2016 in randomly selected small ruminants (n = 1038) from 48 farms located in Colombia, in the departments of northern Cesar in the north and La Guajira in the south. An indirect ELISA was used to detect IgG antibodies to T. gondii in the animals. A standardized questionnaire was used to obtain information on putative risk factors. We conducted the association analyses by using univariable and multivariate logistic regression and report odds ratios (OR) with 95% confidence interval (C.I). The overall seroprevalence in small ruminants was 23.5% (C.I: 21–26.2%). Sheep showed a higher seroprevalence (25.1% C.I: 22.4–28.6%) than goats (18.4% C.I: 22.4–28.6%). The association analysis recognized as risk factors for T. gondii seropositivity farming pigs in addition to small ruminants (OR = 1.96 C.I: 1.414–2.743), the inexistence of manure heap (OR = 2.254 C.I: 1.480–3.433) and drinking water from locally aqueducts (OR = 1.489 C.I: 1.006–2.204). The results of the study confirmed that exposure to T. gondii is common in sheep and goats in dry Caribbean regions of Colombia.
