The present research was carried out in orderto determine the Listeria sp prevalence and its role in the animal reproduction behaviorand importance in Public Health. In 13 dairy herds with a population of 320 anlmals, 73 Holstein cows were chosen at random. In these, milk, vaginal swabs, faecal and blood samples were taken and examined for mastitis. Ten herds had positive isolations of Listeria sp. with a general prevalence of 35.6% and for milk samples 24.6%, vaginal swabs 2.7% and 9.5% in faeces. The bacterial isolations were associated with increased servicesconceptlon rates, less milk production, longer calving intervals, and more empty cows and health problems in the herds. A significative association with mastitis and vaginitis problems was not found, neither with sewage and silage feeding and other animal species in farms. The high prevalence in milk samples is correlated with the figures reported by others researchers in raw milk and cheese in the Bogotá Savannah and this confirms the importance of this microorganism for human beings and the necessity to establish prevention and control measures for food protection.

Milk quality is affected by mastitis and practices used during and after milking. The purpose of this study was to evaluate milking practices, hygienic and nutritional quality of milk produced in Granada, Antioquia, by no probabilistic sampling, ten farms belonging to the association ASOGRAN were selected. Assessment of milking practices was realized by direct observation; mastitis detection was made at each farm using the California Test (CMT). At the end of the milking process two samples with an interval of 60 days were taken, each one analyzed for colony forming units (CFU), somatic cell count (SCC), percentages of protein, fat and total solids; during the interval the producers were trained in good milking practices (GMP). Statistical analyzes were performed using the Wilcoxon test. Before training, failure in the GMP was found. Significant differences for the UFC and mastitis tests before and after training were found; furthermore 24% of the mammary glands were affected by subclinical mastitis. In the hygienic milk quality, a mean CFU 6x105 and 3x105, respectively, was detected. The SCC was not significantly different, reporting average values of 630,000 and 750,000, respectively. The nutritional quality showed percentages of fat, protein and total solids, higher than those required by Colombian law. The results indicate the importance of the application of GMP on milk quality.

Dietary fiber helps to reduce the risk of suffering from some chronic diseases. Despite this, the global average intake of this component is still lower compared to the recommended levels. This fact has moti-vated to the food industry to incorporate dietary fiber obtained from vegetable sources in food products. The aim of the present study was the evaluation of the main quality characteristics of different yogurt formulations, as the function of the incorporation of dehy-drated passion fruit epicarp with a high dietary fiber content (71,4 ± 0,04%), and concentrations of 0 – 0,5% and the effect of dairy fat present in raw cow milk in concentrations of 0, 0,5 and 3,0%. Some physical-chemical properties such as pH, acidity (% of lactic acid), viscosity (cP) and color parameters by use of CIELab system method were evaluated in 6 different formulations. According to the results, a sensorial analysis was conducted and the stability of two yogurt formulations was determined during a storage period of 29 days at 4°C.The incorporation of EMD significantly contributed to the increase of the acidity and viscosity of the product. EMD favored the stability of yogurt gel and allowed to obtain acceptable results in sensorial attributes until day 15 of storage. The incorpora-tion of EMD in the elaboration of yogurt, allowed the enrichment of the nutritional value due to the contribution of dietary fiber, which can act as a functional substitute of dairy fat.

The aim of an appropriate milking procedure is to reduce the risk of milk contamination. This work studied the risk factors in milking practices that affect the hygienic (CFU) and sanitary quality (SCC) of milk tanks from the “Mid Magdalena” and ”Atlantic Coast” regions of Colombia. A checklist that explored pre-milking, milking and post-milking activities as possible factors influencing CFU and SCC in 23 buffalo farms was applied. On the day of the checklist survey, samples of cold milk in tank to test for bacteria counts were taken, finding an average of 182.6 ± 295.4 x 103 CFU/mL; also tested for SCC was tested and an average of 137.1 ± 158.9 x 103 sc/mL was found. As hygienic quality protective factors generating a low CFU count in bulk tank floor tidiness, udder and teat washing, hand washing frequency, duration of teat sealing, wiping of sealing dip, presence of filter in the milk container, the use of disposable filters, milking the buffalo cows positive for mastitis towards the end of the milking process and cooling the milk at 4°C in less than 2 hours after milking was identified. The risk factors associated with high CFU counts are the absence of hands washing with OR (Odds Ratio) 1.7 (p= 0,003), teat sealing with OR 1.07 (p= 0,003), use of disposable filter in milk container, and the period of time between milking and tank storage with OR 1.83 (p= 0.4). The risk associated with high SCC ́s is material for hand drying with OR 1.04 (p= 0.002).

Listeriamonocytogenes is a Gram-positive cocobacillus that has been isolated from soil, water, vegetables, raw milk, meat and meat byproducts. This micro-organism has been considered an important problem of public health especially in immudepressed and elderly people, children and pregnant women. Previous studies made in Colombia have demonstrated the presence of the micro-organism in milk and crude cheeses, as well as in milk cow conglomerates and Holstein carcasses. With the purpose of continuing the studies related to the epidemiology of the disease and its importance in public health, the actual work was made to determine the presence of L.monocytogenes in carcases of Cebu cattle, in a slaughterhouse of the Savannah of Bogotá (Colombia). Of a population of 1600 animals slaug-htered in a period of two months, 120 were examined. The samples were taken of four different points (hip, skirt, chest and neck), obtaining ten (8.33%) carcases contaminated with L.monocytogenes, demonstrating the high risk of the consumption of contaminated meat for the population. To prevent contamination with L.monocytogenes of carcasses destined to human con-sumption, it is necessary to establish Hazard Analysis and Critical Control Points (HACCP) plans at farm level for animals bred for slaughter and, previous to and during the process of sacrifice.

This paper had as objective the isolation of different bacteria, which cause mastitis and, simultaneously, make emphasis on the differentiation of Mycoplasma species, taken from stored milk samples and individual cows. The animals and the milk were provided by farms from the Boyaca ́s high altitude plateau. The process was carried out through a convenience probabilistic sampling and also a descriptive, longitudinal and retrospective research, during 2010 and 2012. The researches took into account 30 technically managed milking farms, each with approximately 50 milking cows. Streptococcus agalactiae was isolated from 9.1%, being the most detected pathogen. The mean Staphylococcus aureusisolates was of 6.6%. Mycoplasma bovis was not found in any sample during the three year period of the research, while M californicum was recovered from 14 samples (1.5%) during this time lapse and M. alcalescens was detected in 31 samples (3%). Acholeplasma spp. was isolated from 19 samples (1.4%). This research corresponds to first report of Mycoplasma spp. Isolation from milk samples at the Altiplano Boyacense Colombia.

Objective. To evaluate the therapeutic efficacy of a proteolytic drug "chymotrypsin" combined with beta-lactam antibiotics in cows with acute mastitis. Material and Methods. Fourteen cows with acute mastitis. Three cows were treated with a beta-latam antibiotic (BLA) and the other eleven cows were treated with chymotrypsin plus beta-lactam antibiotic (C+BLA). The response was evaluated according to the semiological findings, somatic cell count (SCC) and a microbiological culture. Results. There was a therapeutic efficacy comparing the pre and post treatment period (SCC reduction, p < 0.01) and a reduction of clinical signs in 84.7% of treated quarters in the first day of treatment (C+BLA) compared with (BLA). Conclusions. Chymotrypsin improves the treatment of acute mastitis when is combined with BLA, controlling the infected mammary glands, compared with the group treated only with amoxicilina and clavulanic acid.
